The Jewish New Year called Rosh Hashanah begins at sunset on September 24. The two-day holiday is symbolic of our aspirations for a return to the perfect universe that we inherited, letting go of past mistakes, and the beginning of a sweet new year. Sweet foods are eaten for the holiday like apples and honey.
Recipe for Apple Cake:
4 cups of diced apples
2 cups of regular flour
1 3/4 confectioners sugar
1/2 cup oil
2 teaspoons baking soda
2 teaspoons cinnamon
1 cup chopped walnuts
1/4 teaspoon salt
2 eggs
Break eggs over diced apples. Add sugar, cinnamon, oil, nuts. Mix flour and baking soda with a fork. Add to apple
mixture. Add salt. Mix well. Place all ingredients into a greased 9 X 13X 2 Pyrex Pan. Bake.
Cook for 55 minutes in an oven at 350.
